Step:

  1. Partially boil buttetnut squash in salted water 1/2 way. Drain.

  2. Heat oil in a large saute pan. Add zucchini. Saute zucchini until 1/2 way cooked. Add butternut squash. Season. Add butter and toss when 95% cooked.

  3. Variations; Yellow squash, onion, shallots, garlic, celery root, potato, sweet potato, brown sugar, oregano, basil, rosemary

  1. 1/2 butternut squash; diced
  2. 1 small zucchini; diced
  3. 2 tbsp butter
  4. 1 vegetable oil; as needed
  5. 1 salt and white pepper; to taste
