Step:

  1. Preheat oven to 325°F.

  2. In a large bowl, cream butter, sugar, and vanilla.

  3. Stir in flour and peanuts.

  4. Pinch off pieces of dough the size of a small walnut; place on ungreased cookie sheet.

  5. Bake about 20 minutes.

  6. Cool on cookie sheet for 1 to 2 minutes; transfer to wire cooling racks.

  7. Roll in granulated sugar while still warm.

  1. 1 cup butter, softened
  2. 1/2 cup granulated sugar
  3. 2 tsp vanilla extract ( I add a little extra)
  4. 2 cup all purpose flour
  5. 1 3/4 cup chopped salted peanuts
  6. 1 granulated sugar for rolling
