Step:

  1. If using raw chicken, simmer in water with pepper for 20 minutes until cooked through, or season with pepper and bake at 325°F for 25 minutes.

  2. Let cool and then chop. Place in a serving bowl with the pecans and ginger.

  3. In a separate bowl, combine the mayonnaise, buttermilk, pepper, salt (if using), and Italian style seasoning

  4. Pour over the chicken mixture and stir to coat.


Ingredients

  1. 1 lb package boneless/skinless chicken breast (about 3 cups cooked chicken chunks)
  2. 1 tsp ground pepper
  3. 1/2 cup chopped pecans or walnuts
  4. 2 tbsp crystallized ginger, finely minced (optional)
  5. 1/3 cup mayonnaise regular or light
  6. 1/3 cup buttermilk
  7. 1/4 tsp salt (optional)
  8. 1/4 tsp ground pepper
  9. 2 tsp italian style seasoning (I use Tuscan Sunset by Penzeys)
