Step:

  1. Preheat oven to 450 degrees.

  2. Mix ingredients for crumb topping and set aside.

  3. In large mixing bowl mix flour, baking powder, baking soda and salt until well combined.

  4. In seperate bowl, mix butter, eggs, sugar, vanilla and buttermilk.

  5. Add wet ingredients to the dry. Fold to combine. Do not over mix. Just gently fold until combined.

  6. Fold in blueberries. Mixture will be thick.

  7. Line muffin pan with liners and fill cups all the way to the top.

  8. Sprinkle crumble mixture on top of all the muffins.

  9. Bake at 450 degrees for 5 minutes.

  10. After 5 minutes, lower heat to 375 and bake for 12 to 15 minutes.

  11. Test muffins after 12 minutes. If toothpick comes out clean they are done.

  12. Cool on rack.

  13. I keep mine, if they are any left haha in a big tupperware container with lid.

Ingredients

  1. 2 1/2 cups all purpose flour
  2. 1 tablespoon baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teasoon salt
  5. 1 stick butter, melted and cooled
  6. 2 large eggs
  7. 1 cup buttermilk. You can use whole milk also
  8. 1 cup granulated sugar
  9. 1 tablespoon vanilla
  10. 1 1/2 cup blueberries. Thawed if using frozen
  11. Crumb topping:
  12. 1 tablespoon all purpose flour
  13. 1/4 cup sugar
  14. 1/8 teaspoon cinnamon
  15. 2 teaspoons melted butter
