Step:

  1. preheat oven to 400°...

  2. heat large skillet. season beef with salt and pepper, going heavy on the pepper. heat oil.

  3. sear beef until browned, about 8 minutes. transfer to roasting pan. roast about 30 minuted until internal temperature is 125°

  4. place roast on cutting board and loosely tent with tin foil.

  5. to same skillet add mushrooms, scallion whites, garlic, ginger, 1 1/2 t salt and pepper flakes. cook until soft, 8 mins. add scallion greens and sherry and cook until liquid evaporates, about 2 minutes.

  6. slice roast, serve with veggies

  1. 2 lb center cut beef tenderloin roast
  2. 1 1/2 tsp kosher salt
  3. 1 pepper
  4. 2 tbsp vegetable oil
  5. 1/3 cup hoisin sauce
  6. 1 lb shitake mushrooms, stems removed and caps quartered
  7. 3 bunch scallions, green and white parts seperated, cut in 2 in pieces
  8. 4 clove garlic, minced
  9. 1/2 inch piece ginger
  10. 1/2 tsp red pepper flakes
  11. 1/2 cup dry sherry
