whisk buttermilk, hot sauce, garlic, salt, thyme, oregano together in large bowl.
put chicken in mixture, cover and refrigerate overnight
shake flour, paprika and pepper in large ziplock bag. set a metal rack on a baking sheet. shake 2-3 pieces at a time in closed bag. set on rack.
set another rack on a baking sheet. heat 3/4 in oil in 2 heavy skillets. oil should heat to 340° or bubbling lightly around chicken when its added.
add white meat in one pan and dark in the other. fry about 10 minutes on each side until golden brown, 15 minutes for the dark meat.
transfer chicken to clean rack. serve hot.
