Crush or process crackers until fine crumbs (not dust!). Add sugar and knead butter in until it forms a loose dough. Press into an 8" pie pan and chill for 15 minutes. Preheat oven to 350 and bake crust for 18 minutes until lightly browned.
While crust is cooling, beat together milk and yolks. Then beat lemon juice. Pour into crust and bake for 16 minutes until filling is completely set.
Chill pie for several hours. Must be completely chilled to slice well. Top with fresh whipped cream and sea salt for garnish.
