Place first 3 ingredients into a medium bowl. Blend with a whisk. Place mixture into a zipper sandwich bag.
Place mix into a wide mouth pint size canning jar. (Use a new jar - not one that has ever been canned in or cooked in before.) Place applesauce in jar next. Screw lid onto jar.
Decorate jar and attach a recipe card with the following instructions.
Coconut Pecan Bread To Bake In A Jar
Remove contents of jar. Empty mix into a medium bowl.
Add 1 egg, 1 tablespoon of oil and applesauce. Mix well.
Spray inside of jar with cooking spray.
Place batter into jar. DO NOT PLACE LID ON JAR.
Bake at 325°F for 45 minutes. (To bake, place jar in a small shallow baking dish to keep it balanced in the oven.) Use hot pads to remove from oven. Let bread cool for 10 minutes. Run a knife around the inside of the jar to loosen bread.
Slide bread out of jar and slice to serve.
