Step:

  1. Preheat oven to 350°F.

  2. In a large bowl, cream butter and sugars. Add eggs and vanilla; mix well.

  3. In a separate bowl, combine flour, baking powder, cinnamon, pepper, salt, xanthan gum, and expresso powder; add to butter mixture and mix well.

  4. Stir in chips.

  5. Place rounded tablespoonfuls 2 inches apart on parchment paper-lined cookie sheets.

  6. Bake at 350°F for 12 to 16 minutes. Cool on cookie sheets for 5 minutes, then transfer to wire cooling racks.

  10. 4 tbsp instant expresso powder
  11. 1/4 tsp ground cayenne pepper
  12. 1 cup (6 ounce package) semi - sweet chocolate chips
  13. 1 cup (6ounce package) white chocolate chips
  14. 1 cup granulated sugar
