Get your ingredients together. This is going to be fast!
Peel and quarter and quickly parboil your potato. Important not to overdo this, so keep an eye on it
Dice your onion and rough cut the green pepper
whisk up your 2 eggs in a bowl
The potato is probably done now! A good way to check is gently prod with a sharp knife - if it goes in with just a little resistance, they're done! Let them cool and rough cut a bit smaller
Heat up a pan with a splash of olive oil and fry the potato, onion and green pepper. Chop up the ham and add to the pan. Add salt and pepper to your taste
When the vegetables are starting to brown, pour the egg into one side of the pan as shown...
then let it firm up a little
After a couple of minutes when the egg is firmed up, toss everything together in the pan. Cook for another minute or two and serve.
