  1. Reconstitute the gelatin sheets in water.

  2. Warm the milk for about 1.5 minutes in the microwave at 500 W and dissolve the gelatin.

  3. Remove the stone from the avocado, and combine with sugar, lemon juice, and salt in a food processor. Thin the mixture out with the milk.

  4. Tilt the glasses, and pour Step 3 into them. Chill for at least 1 hour in the fridge to harden (make sure they're firming up properly).

  5. Wash your bell pepper, place in a lidded container and microwave for 10 minutes at 500 W or roast it in an oven.

  6. Soak the bell peppers in water and peel off the skin. Remove seeds and stem. It might be a bit harder to peel if you used a microwave.

  7. Warm milk and dissolve the gelatin in it.

  8. Place the Step 6 bell peppers, sugar and salt in the food processor, and blend with the milk.

  9. Once you are sure the avocado has firmed up, pour the bell pepper mixture from Step 8 into the Step 4 glasses. Chill in refrigerator.

  10. Blanche the tomato to remove the skin, remove seeds, and cut into 5 mm cubes.

  11. Toss Step 10 with lemon juice, sugar, salt, tabasco and let sit for a while.

  12. Top Step 9 with 11 and serve.

  1. 1 □Avocado
  2. 3 grams □Gelatin sheet
  3. 1 tbsp □Lemon juice
  4. 130 ml □Milk
  5. 2 tsp □Sugar
  6. 2 pinch □Salt
  7. 1 ☆Red or yellow bell pepper
  8. 3 grams ☆Gelatin sheet
  9. 150 ml ☆Milk
  10. 1 tsp ☆Sugar
  11. 2 pinch ☆Salt
  12. For the tomato sauce
  13. 1 Ripe tomato
  14. 1 tbsp Lemon juice
  15. 2 tsp Sugar
  16. 2 dash Salt
  17. 2 drops Tabasco sauce
